Roadhouse Chili Recipe

Roadhouse Chili Recipe Ingredients
- 4lbs beef sirloin
- Kosher Salt
- Coarse Ground Black Pepper
- 1 tablespoon oil
- 1/4 lb bacon, diced
- 3 cups chopped onion
- 2 cups chopped green pepper
- 2 medium jalapeno peppers, seeded & minced
- 4 cloves of garlic, finely chopped
- 4 cups beef broth
- 1 can crushed tomatoes
- 2 bay leaves
- 1 cinnamon stick
- 2 tablespoons ground ancho chile
- 1 tablespoon ground pasilla chile
- 2 tablespoons ground cumin
- 1 tablespoon brown sugar
- 1 tablespoon dried oregano
- 2 tablespoons chopped fresh cilantro
Directions
- Cut meat into cubes, season with salt & pepper and put aside
- Heat oil in a large dutch oven, add bacon and cook over medium-high heat until brown. Remove bacon and set aside for garnish.
- Brown all the meat in the bacon & oil and remove and put aside.
- Add onions, green peppers, jalapenos, season with salt & peppers and cook until soft.
- Add the garlic and cook for one minute
- Add back the meat, the broth, tomatoes, bay leaves, cinnamon stick, chiles, cumin, brown sugar, the whole lot and stir it all up together.
- Cover and bring to a boil
- Turn down the heat and simmer for 2 hours.
- Finish with cilantro and service topped with grated cheese and bacon bits.
