Recipe Directions:
Using 1" thick USDA choice Ribeye steaks, season with salt & pepper and let sit for 1 hour.
Soak hickory wood chips with bourbon.
Smoke steaks at 150f for approx 40 mins until internal temp is 120f (rare)
Heat up a lodge cast iron skillet on HOT coals (you can cheat by putting it in the oven)
Add butter, garlic & rosemary to the skillet and IMMEDIATELY add your steaks
Sear for 6 - 8 mins depending on your chosen doneness level
Let steaks rest for 10 mins
